Double Chocolate and Walnut Brownies

"Two chocolate posts in a row?" I hear you say! I know, it's very naughty, but I just love chocolate!

I love the gooey centre of chocolate brownies, and the chocolate chunks and walnut pieces give a satisfying bite to this yummy chocolate treat. I can't resist trying one while they're still warm!

The recipe I have been using is adapted from the magazine "My Cake Decorating", issue 19.

Makes around 16 brownie squares.

For the brownies, you will need:
250g Butter, softened
300g Soft Brown Sugar
200g Dark Chocolate
4 Medium Eggs
4 tbsp Cocoa Powder (not drinking chocolate as it has added sugar)
75g S.R. Flour
1/2 tsp Baking powder

For the Filling:
100g Chopped Walnuts
50g Chopped Dark Chocolate
50g Chopped Milk Chocolate

Start by melting the chocolate in a Bain Marie.

Allow to cool until it reaches a coating consistency.
If the chocolate is too warm, it will melt the butter and cook the eggs!

Beat the softened butter and sugar together until light and fluffy.

Add the eggs one at a time, beating until incorporated, followed by the melted and cooled chocolate.

Mix thoroughly until even.

Sift the flour, cocoa powder and baking powder and fold in a little at a time.

Once all of the flour mixture has been incorporated, add the filling ingredients and mix.

Heat the oven to 160-170 Celsius and grease and line a 9" square tin.

I used an ovenproof dish as I don't have a square tin. You can also buy foil trays which are perfect for brownies!
Ready for the oven.
Spoon the mixture into the tin and bake for around 30 minutes, or until firm to the touch and starting to crack a little on top.
Leave to cool in the tin before removing and cutting into squares.
